Your loved ones will feel blessed as they gather around the table for a St. Patrick’s Day feast full of Irish-inspired favorites like beer-kissed corned beef and homemade soda bread—yum!
Beer-Braised Corned Beef
Active time: 5 min. Total time: 8 hrs. Serves: 6
- 1 lb. baby carrots, trimmed
- 1 large onion, quartered
- 2 cloves garlic, minced
- 1 bay leaf
- 6 parsley stems
- 3 lb. corned beef
- 1 (12 oz.) bottle stout beer
- 1 medium head green cabbage, cored and cut into wedges
In slow cooker, mix first 5 ingredients. Place beef on top. Pour in beer. Add 3 cups water.
Cover; cook on low 8 hrs. or until beef is tender. Add cabbage during last 30 min. of cooking.
Transfer beef to platter; let sit 10 min. before slicing. Serve with vegetables and pan juices.
Creamy Leek Mashed Potatoes
Active time: 10 min. Total time: 25 min. Serves: 6
- 2 lbs. all-purpose potatoes, peeled and cubed
- 3 Tbs. butter, divided
- 2 medium leeks, thinly sliced
- ½ cup sour cream
- ½ cup whole milk
In pot over high heat, bring potatoes and enough salted water to cover to a boil. Cook 12 min. or until fork-tender. Drain well. Return to pot.
Meanwhile, in large nonstick skillet over medium heat, melt 2 Tbs. butter. Add leeks and cook 5 min. or until tender, stirring occasionally. Add leeks, remaining butter, sour cream and milk to pot with potatoes; mash until smooth. Season to taste with salt and pepper.
Rainbow Veggie Bake
Active time: 20 min. Total time: 45 min. Serves: 6
- 4 tomatoes, cut into ¼" slices
- 2 zucchini, cut into ¼" slices
- 1 red onion, cut into ¼" rings
- 1 large red pepper, seeded and quartered
- 1 Tbs. chopped fresh thyme
- 2 Tbs. panko bread crumbs
- 2 Tbs. grated Parmesan
Heat oven to 400ºF. Arrange vegetables on baking sheets. Coat with cooking spray; sprinkle with thyme. Season. Roast 20 to 25 min. or until tender, turning once. Transfer peppers to bowl; cover with plastic wrap. Let cool. Peel; slice into strips.
Meanwhile, spread bread crumbs and cheese on sheet of foil. Bake 5 min. Stack veggies on platter. Top with crumbs.
Cranberry Irish Soda Bread
Active time: 15 min. Total time: 1 hr. Serves: 12
- 1 cup dried cranberries
- ¼ cup orange juice
- 4 cups all-purpose baking mix, like Bisquick
- ¼ cup sugar
- 1 large egg
- 1¼ cups light sour cream
Heat oven to 375ºF. In covered heatproof bowl, microwave cranberries and orange juice 2 min. Drain well.
In bowl, combine baking mix, sugar and cranberries. Stir in egg and sour cream until dough forms. Shape into round. Place on greased baking sheet. Cut an X in center of dough.
Bake 25 to 30 min. or until golden brown. Let cool 15 min.
