Made with no butter or oil, this perfectly sweet almond-kissed cake layered with juicy peaches is sure to light up the room with smiles!
Active time: 20 min. Total time: 1½ hours. Serves: 10
- 1 cup granulated sugar
- 3 eggs
- 1 tsp. almond extract
- ¼ tsp. salt
- 1 cup, plus ¼ cup flour, divided
- 6 peaches, peeled, pitted, and thinly sliced
- 1 tsp. powdered sugar
- ¼ cup sliced almonds, toasted
Step 1. Heat oven to 350°F. Grease 9" round springform pan and line with parchment paper. Using electric mixer on medium speed, beat granulated sugar and eggs for 5. min. or until ribbons form. Add almond extract and salt; slowly incorporate 1 cup flour. Mix until flour is just incorporated, about 30 sec.
Step 2. In bowl, toss peach slices with remaining flour; pour into pan. Pour batter over peach slices, pressing down with spatula so batter drips in between peaches.
Step 3. Bake 50 min. or until toothpick inserted in center comes out clean. Let cool at least 20 min. Carefully remove cake from springform pan. Sprinkle powdered sugar on top using small strainer. Garnish with toasted almonds. Serve warm or at room temp.
