Warm their hearts with this good-for-the-soul roast chicken feast that’s healthy, delicious and so easy to make!
Roast Lemon-Herb Chicken
Active time: 10 min. Total time: 2 hr. Serves: 6
- 3 Tbs. olive oil
- 3 Tbs. chopped fresh thyme
- 3 Tbs. chopped fresh oregano
- 1 tsp. garlic powder
- ½ tsp. paprika
- 3 lemons, 1 zested and juiced, 2 halved
- 1 (5 lb.) roasting chicken
- 2 thyme sprigs
- 2 oregano sprigs
Heat oven to 375ºF. In bowl, whisk first 5 ingredients, 1 Tbs. lemon juice and 2 tsp. lemon zest. Season with salt and pepper; set aside 1⁄3 of mixture. Place chicken in roasting pan. Season cavity with salt and pepper; stuff with herb sprigs and lemon halves.
Rub chicken skin with 2⁄3 herb mixture. Roast 1¾ hrs. or until instant thermometer reads 165ºF, covering with foil if browning too quickly. Brush with reserved herb mixture; let sit 10 min. before carving.
Creamy Mashed Cauliflower
Active time: 20 min. Total time: 20 min. Serves: 6
- 1 large head cauliflower, cut into florets
- 1 large onion, quartered
- 3–4 Tbs. chicken broth
- 1 Tbs. olive oil
- 2 Tbs. chopped fresh chives
Place steamer basket in large pot. Add water to just below basket. Arrange cauliflower and onion in basket. Place over high heat. Bring to a boil. Reduce heat; cover and let simmer 10 min. or until cauliflower is tender. Drain well.
Transfer cauliflower mixture to food processor. Add broth and olive oil. Process 30 sec. or until mixture resembles mashed potatoes. Season to taste with salt and pepper. Stir in chives.
Garlicky Brussels Sprouts with Bacon
Active time: 15 min. Total time: 30 min. Serves: 6
- 1½ lbs. small fresh Brussels sprouts, trimmed
- 3 slices bacon, diced
- 1 cup frozen pearl onions, thawed
- 1 garlic clove, finely chopped
- ¼ cup chicken broth
In saucepan over medium heat, cook sprouts in boiling salted water 5 min. Drain and transfer to bowl of ice water. Drain again and pat dry.
Meanwhile, in skillet over medium heat, cook bacon until crisp. Remove and drain on paper towels. Add sprouts, onions, garlic and chicken broth to skillet. Sauté 5 min. or until broth has evaporated. Sprinkle with bacon; season to taste.
