Priscilla Shirer is no stranger to chaos. Not only is she a New York Times bestselling author and the leading actress in War Room—the surprise box office hit that is taking Hollywood by storm—she is also a busy mother who homeschools her children!
Despite her crazy schedule, Shirer still makes time to bring her family together, and one of the easiest ways to get them gathered around the table is by making her famous pumpkin bread.
"Of all the mouthwatering delicacies that my mother, Lois, made for me growing up, none tempted my siblings and me more than her delicious pumpkin bread," Shirer says. "Now, I make it for my family, and they love it just as much as I did, and still do!"
Lois’s Pumpkin Bread
Servings: 2 dozen muffins or 2 loaves
2 cups pumpkin (1 15-oz can will do)
1 cup vegetable oil
3 cups sugar (or your favorite sugar substitute)
3 1/4 cups flour (you can substitute freshly ground wheat for white and it works wonderfully)
1 tsp baking powder
1 tsp baking soda
1 tsp clove powder
1 tsp nutmeg
2 tsp salt
1 tsp cinnamon
Stir dry ingredients together. Then, mix pumpkin, oil, sugar, and beaten eggs in another bowl. Add wet to dry and stir.
Bake at 350°F for 20 minutes for muffins and 45 minutes for loaves. Cooking time may vary based on your oven :) Just stick a toothpick in to check for done-ness!
Slather with butter and enjoy!
