Smoky-Sweet St. Louis–Style BBQ Ribs
Active time: 20 min. Total time: 5 hrs. Serves: 16
- 2 (5 lb.) racks St. Louis-style pork ribs
- 6 Tbs. Dijon mustard
- 2 (2.25 oz.) pkgs. BBQ rub, like McCormick Memphis Pit
- 2 cups prepared barbecue sauce, like Sweet Baby Ray’s
- ¼ cup rice vinegar
Remove tough membrane on underside of ribs. Place ribs on double sheets of heavy-duty foil. Brush both sides with mustard. Season with rub. Wrap tightly. (Can be done the night before.) Heat oven to 300°F. Place on baking sheets. Bake 4 hrs. (Can be done hours ahead.)
Meanwhile, in bowl, combine barbecue sauce and vinegar; whisk until well-combined. Transfer half of mixture to second bowl. Unwrap ribs; drain juices and discard. Cut ribs into portions.
Heat grill to medium-high for direct cooking. Brush ribs with half of barbecue sauce. Grill 10 min. or until sauce is lightly caramelized and browning, turning once. Let sit 15 min. Serve ribs with remaining sauce.
Cheddar-Scallion Waffle Cornbread
Active time: 15 min. Total time: 15 min. Serves: 12
- 1 (11.5 oz.) pkg. Southern-style cornbread mix, like Krusteaz
- 1 cup shredded sharp cheddar cheese
- ½ cup minced scallions
- 1 tsp. chili powder, like Morton & Bassett
Heat waffle maker. In bowl, prepare Southern-style cornbread mix as package directs, adding cheddar cheese, scallions and chili powder.
Drop batter in recommended amount onto waffle maker.
Remove to cooling rack when done. Waffles can be reheated in oven, toaster oven or toaster, if desired.
Green Beans with Tomatoes and Onions
Active time: 20 min. Total time: 20 min. Serves: 6
- 1½ lbs. thin green beans, trimmed
- 2 Tbs. reduced-fat Italian dressing
- 1 cup diced tomatoes
- ¼ cup minced onions
- 2 scallions, minced
- 1 clove garlic, minced
In large pot over high heat, bring green beans and enough salted water to cover to a boil. Cook 3 min. more or until tender. Drain and rinse beans under cold water. Toss beans with Italian dressing.
In bowl, combine tomatoes, onions, scallions and garlic. Season to taste with salt and pepper. Arrange mixture over green beans to serve.
