Rolled Flank Steak with Cranberries & Swiss Chard
Active time: 15 min. Total time: 45 min. Serves: 6
- 1 onion, diced
- ¼ cup olive oil, divided
- 4 cloves garlic, minced
- 1 bunch Swiss chard, roughly chopped
- ½ cup fresh or frozen cranberries
- 1 Tbs. balsamic vinegar
- 1½ lb. flank steak
Step 1: In saucepan over medium-high heat, cook onions in 2 Tbs. oil 5 min. Add minced garlic, Swiss chard, cranberries and balsamic vinegar. Cook 10 min. or until chard is wilted and berries have burst. Season to taste with salt and pepper.
Step 2: Heat oven to 400°F. Pound steak to ½" thickness. Season both sides with salt and pepper. Spread chard mixture evenly onto steak; roll up, starting with longer edge. Tie with twine. In ovenproof pan over high heat, heat remaining oil. Sear steak on all sides; transfer to oven and bake 10 min. Let rest 10 min. before slicing.

- 2 tsp. instant yeast
- 1 tsp. sugar
- 2 cups bread flour
- 1 Tbs. minced fresh thyme
- 1 Tbs. minced fresh rosemary
- 3 Tbs. olive oil, divided
- ½ cup shredded Parmesan cheese
Step 1: In bowl, mix yeast, sugar and 1 cup warm water. Let sit 10 min. Using mixer on low speed, gradually beat flour into yeast mixture. Beat in thyme, rosemary and 2 Tbs. oil. Press into greased 9" square pan; let rise in a warm place 1 hr.
Step 2: Heat oven to 400°F. Brush dough with remaining oil; bake 15 min. Top with cheese; bake 5 min. more or until golden.

- 1 head garlic
- 1 head cauliflower, cut into florets
- 4 parsnips, peeled and chopped
- ½ cup olive oil, divided
Step 1: Heat oven to 400°F. Wrap whole head of garlic in foil. Roast 1 hr. On baking sheet, toss cauliflower, parsnips and ¼ cup olive oil. Season with salt and pepper. Roast 30 min.
Step 2: Squeeze roasted garlic out of peel. In food processor, puree garlic with remaining oil. With potato masher or electric mixer, mash vegetables to desired consistency. Stir in garlic oil; season to taste with salt and pepper. Garnish with chives, if desired.
