Sweet-and-Sour Grilled Baby Back Ribs
Active time: 45 min. Total time: 1 hr. Serves: 8
- 2 cups barbecue sauce
- ¼ cup honey
- 1 orange, juiced
- ⅓ cup apple cider vinegar
- 2 racks (5 lbs.) baby back ribs
- 1 tsp. chili powder
- 1 tsp. garlic powder
- 1 tsp. onion powder
Step 1. Heat grill to medium. In bowl, whisk barbecue sauce, honey, ¼ cup orange juice and apple cider vinegar. Season ribs with chili powder, garlic powder and onion powder.
Step 2. Place ribs on grill over direct heat. Cover and grill 45 min. or until cooked through, brushing often with barbecue sauce mixture and turning every 5 min.
Step 3. Remove ribs to platter; tent with foil and let rest 10 min. before slicing. Slice ribs into 3" sections; serve with remaining barbecue sauce mixture. Garnish with fresh cilantro and orange slices, if desired.
Ultra-Creamy Skillet Mac & Cheese
Active time: 10 min. Total time: 30 min. Serves: 8
- 1 lb. dried macaroni
- ½ stick butter
- 1 red bell pepper, diced
- ¼ cup flour
- 3 ½ cups half-and-half
- 2 cups shredded cheddar
- 2 cups shredded pepper-Jack cheese
Step 1. In large pot over high heat, boil macaroni in 2 qts. salted water to al dente; drain.
Step 2. In skillet over medium heat, melt butter. Add bell pepper; cook 5 min. Whisk in flour. Add half-and-half; simmer 10 min., whisking often. Stir in cheeses until melted. Remove from heat; fold in macaroni. Season with salt and pepper. Garnish with fresh parsley, if desired.
Bacon, Green Bean and Shallot Sauté
Active time: 15 min. Total time: 20 min. Serves: 8
- 4 oz. thinly-sliced bacon, diced
- 2 shallots, thinly sliced
- 1 clove garlic, minced
- 2 lbs. green beans
- 1 cup cherry tomatoes, halved
- 1 Tbs. red wine vinegar
Step 1. In pan over high heat, cook diced bacon until crispy, stirring frequently. Add sliced shallots. Cook 5 min. more, stirring continuously.
Step 2. Add garlic, green beans and cherry tomatoes to pan. Cook 5 min. more. Add red wine vinegar. Season to taste with salt and pepper. Arrange green beans on platter in a starburst pattern with tomatoes in the center, if desired.
