Chocolate Chunk Banana Bread

- 2 tsp. instant yeast
- ½ cup sugar
- 1 cup milk, warmed
- 2 ripe bananas, divided
- 5 eggs, divided
- 1 Tbs. vanilla extract
- 3 ½ cups flour
- 6 Tbs. butter, at room temp.
- ½ cup dark chocolate chunks
Step 1: In bowl, combine yeast, sugar and milk; let sit 10 min. In food processor, puree 1 banana until smooth.
Step 2: Using electric mixer on medium speed, mix yeast mixture, eggs and vanilla. Add flour and ½ tsp. salt; then butter and banana puree; mix 1 min. Add chocolate chunks. Cover bowl and let rise in warm place 1 hr. Punch dough down and place in greased loaf pan lined with parchment; let rise 1 hr. more.
Step 3: Heat oven to 375°F. Slice remaining banana in half lengthwise. Place on top of loaf, cut side up, pressing into the dough slightly. Whisk remaining egg and brush loaf. Bake 15 to 20 min. or until golden brown. Cover with foil; bake 25 min. more. Let cool 30 min. before slicing. Sprinkle with powdered sugar, if desired.
