This delicious fresh fruit tart is perfect for Mother’s Day—or anytime you want to show them how much you care
Slice of Heaven Strawberry Tart
Active time: 20 min. Total time: 11⁄2 hrs. Serves: 8
- 3 cups flour
- 1 cup powdered sugar
- 2 sticks butter
- 1 lb. fresh strawberries
- 1⁄2 cup granulated sugar
- 3 Tbs. strawberry preserves
- 1 Tbs. lemon juice
- 4 tsp. cornstarch
- 1 large egg yolk
- 1 Tbs. milk
1. In processor, pulse first 3 ingredients 2 min. Pulse in 2 Tbs. cold water until dough forms. Divide into 2⁄3 and 1⁄3 portions. Shape into disks; wrap. Chill 1 hr.
2. Meanwhile, cut strawberries into quarters. In pot over medium heat, bring berries, granulated sugar, preserves and lemon juice to a boil, stirring occasionally. Reduce heat; let simmer 3 min. Stir cornstarch into 1 Tbs. cold water. Stir into berry mixture; boil 1 min. Remove from heat.
3. Heat oven to 350ºF. Roll larger piece of dough to fit greased 9" loose-bottom tart pan. Press dough into pan; trim edges. Dock bottom with fork. Place on baking sheet; bake 20 min. Meanwhile, roll out remaining dough. With 11⁄2" heart cutter, punch out 35 hearts. Spread strawberry mixture in tart. Arrange hearts over filling. In bowl, combine egg yolk and milk. Brush hearts with mixture. Bake 30 min.; let cool.
