A savory combination of cherries, strawberries, and cookie crumbs to make your summertime even sweeter!
Active time: 20 min. Total time: 2½ hrs. Serves: 6–8
Ingredients
- 1¾ cups flour
- 5 Tbs. cold salted butter, cubed
- 2 Tbs. cookie crumbs
- 1 cup fresh strawberries, trimmed and sliced
- 1 cup fresh cherries, pitted
- 1 Tbs. cornstarch
- 1⁄3 cup sugar
- 1 egg, beaten
In food processor, combine flour and salted butter. Pulse 10 times or until butter is the size of peas. Add 4 Tbs. ice water. Pulse to combine or just until dough comes together, adding extra 1 Tbs. ice water at a time if dough is too dry. Transfer dough to floured work surface; knead 4 times. Shape dough into disk and wrap in plastic film. Chill dough 1 hr. or overnight.
Heat oven to 400ºF with rack in lowest position. On foil or parchment, roll out dough into 12" disk. Sprinkle crumbs in 8" circle in center of dough.
In bowl, toss fruit with cornstarch and sugar to coat; arrange over crumbs. Fold and pinch edges of dough to enclose fruit. Transfer foil or parchment to large baking sheet. Brush dough with egg. Sprinkle with coarse sugar, if desired. Bake 30 min. or until juices are bubbling and dough is light golden brown. Let sit 10 min. before serving. Garnish as desired.
