Slow-Cooked Pork Roast with Cider Sauce
Active time: 15 min. Total time: 8 hrs. Serves: 6
- 1½ lbs. boneless pork butt
- 1 onion, thinly sliced
- 4 cups apple cider
- ¼ cup apple cider vinegar
- 1 tsp. dried oregano
- 1 tsp. dried rosemary
Step 1: Place pork butt and onion slices in 6 qt. slow cooker. Pour apple cider over top. In small bowl, combine apple cider vinegar, oregano and rosemary; season to taste with salt and pepper. Pour on top of pork. Cook on low 6 to 8 hrs.
Step 2: Transfer pork to platter and tent with foil; let sit 30 min. before slicing. With slotted spoon, transfer onions to platter. Pour cider sauce in gravy boat; serve with pork.
Rosemary-Orange Buttermilk Biscuits
Active time: 10 min. Total time: 40 min. Serves: 12
- 2 cups gluten-free flour
- 1 Tbs. baking powder
- 1 stick, plus 2 Tbs. butter
- ¼ cup honey
- 1 orange, zested and juiced
- 1 Tbs. minced fresh rosemary
- 1 cup buttermilk
Step 1: Heat oven to 425°F. In processor, pulse first 3 ingredients and 1 tsp. salt until crumbly; add honey, 1⁄4 cup orange juice, 1⁄2 tsp. zest and rosemary. With processor running, stream in buttermilk; process until ball forms.
Step 2: Roll out dough on floured surface to 2" thickness. Using 3" round cutter, punch out 12 biscuits. Arrange on baking sheet. Brush with buttermilk, if desired. Bake 10 to 12 min.
Parmesan-Garlic Roasted Broccoli
Active time: 30 min. Total time: 45 min. Serves: 12
- 2 heads broccoli, chopped into florets
- 2 Tbs. olive oil
- 2 cloves garlic, minced
- ¼ cup shredded Parmesan cheese
Step 1: Heat oven to 425°F. On large baking sheet, toss broccoli with olive oil and garlic until well-coated. Season to taste with salt and pepper. Roast 25 min. or until broccoli is browned and crisp, turning once.
Step 2: Remove broccoli from oven; sprinkle Parmesan cheese evenly over top. Return to oven; cook 5 min. more or until cheese is browned. Serve garnished with additional shaved Parmesan, if desired.
