Sweet ‘n’ Tangy BBQ Chicken Pieces
Active time: 15 min. Total time: 45 min. Serves: 6
- 1 cup ketchup
- 1/3 cup packed brown sugar
- 3 Tbs. Worcestershire sauce
- 1 tsp. chili powder
- 1 tsp. smoked paprika
- 1 tsp. chopped garlic
- ¼ tsp. cayenne pepper sauce, like Tabasco
- 2 Tbs. olive oil
- 1 Tbs. herb roasting rub, like McCormick
- 1 chicken, cut into serving pieces (about 4 lbs.)
Heat grill to medium. In pot over medium-low heat, bring ketchup, brown sugar, Worcestershire sauce, chili powder, smoked paprika, garlic, pepper sauce and 1 cup water to a simmer. Cook 10 min. or until slightly thickened, stirring occasionally.
In bowl, combine oil and herb roasting rub; brush over chicken pieces.
Grill chicken pieces over indirect heat 20 min. or until chicken is 175ºF, brushing with ½ of sauce mixture chicken during last 5 min. of cooking, turning occasionally. Serve with remaining sauce mixture.
Mac ‘n’ Cheese Pasta Salad
Active time: 20 min. Total time: 20 min. Serves: 8
- 1 lb. elbow macaroni
- 1 jar (15 oz.) Alfredo sauce, like Bertolli
- 2 cups (15 oz.) shredded extra sharp cheddar cheese
- ½ cup light mayonnaise
- 2 cups diced fresh tomatoes
- ½ cup minced fresh basil leaves
Prepare pasta according to package directions. Rinse under cold water; drain.
In food processor, puree mayonnaise, Alfredo sauce and cheddar cheese. Process 1 min. or until smooth. Toss mixture with pasta.
Season with salt and pepper, if desired. Fold in tomatoes and basil. Chill until ready to serve.
Star-Spangled Watermelon Bites
Active time: 15 min. Total time: 15 min. Serves: 8
- 3 ½” slices watermelon
- 4 slices provolone cheese, like Sargento
- 16 blueberries
- 1 lime, zested and juiced
With 2” star cutter, cut out 16 watermelon stars. With 1½” star cutter, cut out 16 provolone stars.
Thread blueberry, cheese and watermelon onto toothpicks. Arrange on platter.
Combine ¼ tsp. lime zest and 1 tsp. lime juice. Drizzle stars with mixture. Serve cold.
